A marble cake is always a delight from start to finish. The marbling technique is forever an experiment; waiting patiently until the loaf has cooled to cut it and see what pattern you’ve created. It reminds me of when I was little and playing with paint, filling half of a page with various coloured splodges and shapes, folding it over then opening it up, not knowing what multi-coloured jumble of patterns awaited me.
Matcha and coconut work together like a dream, with the creamy, rich flavours of the coconut balancing the earthy tones of the matcha perfectly. A beautiful combination, made sweeter with the smooth coconut milk icing and little chews of desiccated coconut.
