A Danish coffee cake, and one of the most delicious things I have ever eaten
I think I will forever have an affinity with Copenhagen. I have only visited once, a couple of years ago, but instantly it felt like a home away from home and left a significant impression on me. I spent some time learning Danish as I was quite adamant on moving there–alas, two years after this goal I’ve found myself in Sweden, which is no bad compromise.
I follow many of the Danish bakeries closely on Instagram, and when Københavns Bageri posted their brunsviger I was transfixed–the pillowy dough, the crevices oozing with butter and brown sugar… I had to make it immediately.
A bold statement but perhaps one of the most delicious things I have baked. Best eaten the day of baking when the glorious dredge of butter and brown sugar that you pour on top before baking is still chewy and slightly solidified at the edges, but it keeps for a couple of days when it is still incredibly delightful.
