A subtly crunchy crust gives way to a beautifully tender crumb in this loaf cake, fragrant with orange zest and juice, and rich with the deep, sweet and salty flavour of miso.
While hot from the oven, the sponge is liberally brushed with a glaze of orange juice and burnt honey, with a touch of lemon juice for brightness, which intensifies the flavour, adds delicious moistness and makes the top of the sponge gloriously sticky and moorish. The slight bitterness from the burnt honey works so well to balance the sweetness, and combined with the orange gives a flavour reminiscent of marmalade, which makes this cake even more satisfying and comforting to eat.
Wonderful eaten as is, perfect with a scoop of vanilla or caramel ice cream, and also glorious toasted and spread with a generous amount of salty butter.
