Recipe: spiced oat and coconut cookies with early grey white chocolate ganache

An autumn cookie

There is a very special place in my heart for the often underrated oatmeal cookie. My oatmeal cookie recipe was one of the first that I ever (successfully) created, and this cookie recipe is a riff on that. Chewy with brown sugar, fragrant with brown butter, these cookies are rippled with pumpkin seeds and coconut and lightly spiced with cinnamon and ginger. They are delicious as they are, but for an extra touch of decadence, I have sandwiched them here with a creamy layer of whipped white chocolate ganache spiked with earl grey. The perfect autumn cookie.
