Crisp, chewy meringues, layered up with generous amounts of velvety vanilla whipped cream and a sweet yet tart strawberry and raspberry compote.

A perfect make ahead dessert, with the meringues being made the day before serving, the option to make the compote the day before too, and the whipped cream only taking 10 minutes to make just before serving.

You can make the meringues the day of serving, but I recommend making them the night before to allow them to cool completely in the oven overnight and help prevent cracks. If making the meringue the night before isn’t possible, you can make them the day of serving but I recommend allowing them to cool in the oven for at least 3 hours after they finish baking.

For the berry compote, it is delicious served cold or warm here. If you make it the day before serving and want to serve it warm, simply heat it in the microwave in 15 second intervals, or heat in a pot until just beginning to simmer.
